Polynesian Spam Yum-Yum
The Spam cupcakes were interesting and edible but I don't think I will be trying it again in a while. However last week I made Polynesian Spam Yum-Yum and it was damn tasty. Here is the recipe that I got from the official Spam Website.
Polynesian Spam Yum-Yum
1 (8-ounce) can pineapple tidbits
1 (1.75-ounce) package sweet and sour sauce mix
1 large onion, sliced
1 large green pepper, cut in 1-inch strips
1 tablespoon oil
1 (12-ounce) can SPAM luncheon meat, cut in 1-inch strips
1 (8-ounce) can sliced water chestnuts, drained
Chow mein noodles and/or cooked rice
Drain pineapple, reserving juice. Add water to juice to make 1 cup. Stir in sweet and sour sauce mix; set aside. In large skillet, saute onion and green pepper in oil over medium heat 4 minutes, stirring constantly. Add SPAM and water chestnuts and cook 1 minute. Add sweet and sour sauce and pineapple to skillet. Bring to boil and boil 1 minute. Serve over chow mein noodles and/or rice. Serves 4.
