Jake's Kick @$$ Salsa Recipe
I am going to a Christmas party with Kymberly tonight and I have to bring an appetizer dish so I present to you
Jake's Kick @$$ Salsa
4 ripe fresh tomatoes, finely chopped
2 red pepper, deseeded and finely chopped
2 green chillies, deseeded and finely chopped
2 lime, juiced
1/2 cup virgin olive oil
1 bunch fresh basil, chopped
1 bunch fresh cilantro, chopped
5 cloves garlic, finely chopped
1/4 cup ground cumin
1 tablespoon salt
1 onion, finely chopped
1 cup cold water.
Make sure to wear gloves if possible when cutting the chillies and be careful if you have chili juice on anything.
Combine all ingredients in a big plastic bowl and let it sit for about 20 minutes before serving. It makes about a gallon of salsa. It is good if you use it as a seasoning while baking chicken. Serve with good chips and beer.

where do you get good tomatoes this time of year? Roma? canned?

There were some good BC Hot House tomatoes. Since they grow indoors with lamps they are always good.
